What ISO 9001 requires from work instructions
ISO 9001:2015 does not prescribe work instructions by name. It requires documented information to the extent necessary to support the operation of processes (clause 4.4), controlled documented information that is available and suitable where needed (7.5), and controlled conditions for production including the availability of documented information that defines the characteristics of products and the activities to be performed (8.5.1). It also requires evidence of competence (7.2) and retained documented information as evidence of results (8.5.1, 8.6).
In practice auditors look for three things: is the current version of the instruction available at the workstation, is the person competent, and is there evidence that the required checks were done. Digital work instructions with version control, a skills matrix and an execution log answer all three by design.

Use case: external audit without a binder
During a surveillance audit the auditor asked how a machine operator knows the current version of the instruction. Frequently asked questions about ISO 9001 and work instructions
Not by name. It requires documented information where its absence would lead to deviations. Where a task is error-prone or performed by several people, an auditor will expect an instruction.
Yes. ISO 9001 is medium-neutral: documented information can be paper, PDF or an app, as long as it is identified, controlled, available and protected.
That the current version was used, that the person was competent and that the required checks and results were recorded. An execution log with user, timestamp, values and photos covers all three.
